Hey, sugar pops!
Is it just me, or do pancakes make everything better? Yes, they do take a little more preparation than your average bowl of cereal or scrambled eggs, but sometimes a chica/dude just gotta get pancakes in her/his belly.
As a child, Aunt Jemima was my BFF. I don’t mind the taste of the box mix, but now that I have grown up and have an ever-growing passion for cooking up a storm, I almost can’t bring myself to using the plain box mix! I am totally not bashing the box mix, but I just prefer making my own 🙂 And by making your own, you can ensure the ingredients are nutritious without all the extra ingredients and preservatives.
Two nights ago, pancakes were on. my. mind. Like, for real. I knew immediately what was on the menu for breakfast. Here is a little picture of my creation yesterday morning-
Post photo shoot, I topped them with a big ol’ spoonful of peanut butter which got all melty and heavenly. GET IN MAH BELLY.
Banana Dark Chocolate Protein Pancakes
- 1 banana, mashed
- 1 scoop protein powder (I used vanilla, but chocolate would be even better!)
- 1/4 cup egg whites
- 1/2-1 T. dark chocolate cocoa powder
- 1/4 tsp. baking powder
- 1/8 tsp. baking soda
- stevia, etc. to taste; optional (my protein powder is sweetened with stevia, so I didn’t add any)
In a tupperware or bowl mashed a banana with a fork. Add a scoop of protein powder and the egg whites, then mix. Add the cocoa powder, baking powder, and baking soda, then mix. Taste before adding sweetener.
Heat a medium to large skillet at medium heat & spray with non-stick spray or a bit of oil (coconut, olive, canola, etc.). Pour batter, forming three pancakes. Flip when bubbles start to bubble up in the middle (abut 3-5 min.).
Top with fruit, nut butter, syrup, or whatever the heck you want! Enjoy 🙂
